COLORFUL LENTIL SALAD

This colorful lentil salad is light and nutritious, ideal as a meal or side dish. It is quick to prepare and offers a richness of flavors and colors, making it the perfect choice for warm days.

Ingredients

  • 200 g of lentils
  • 1 red pepper
  • 1 yellow pepper
  • 1 onion
  • 1 tomato
  • 2 tablespoons of olive oil
  • 1 tablespoon of wine or apple vinegar
  • Salt and pepper to taste

Preparation

  1. Wash the lentil and put it in a pot of cold water.
  2. Cook over medium heat until tender, about 15 minutes.
  3. Drain the lentil and let it cool.
  4. Cut the peppers, onions and tomatoes into small cubes.
  5. In a large bowl, mix the cooled lentils with the chopped vegetables.
  6. Add olive oil, vinegar, salt and pepper.
  7. Mix well and let it rest for 10 minutes before serving

Serving

Serve cold, as an independent meal or with roasted chicken or fish. This salad is refreshing and rich in fiber, providing a long-lasting feeling of satiety.
