CHOCOLATE MOUSSE
This rich chocolate mousse is ideal for all chocolate lovers. It consists of a juicy biscuit with hazelnuts and a rich mousse filling, which makes it a perfect choice for special occasions or as a dessert for unexpected guests.
Ingredients
For the biscuit:
- 4 egg whites
- 110 g of sugar
- 150 g of finely chopped hazelnuts
- 2 spoons of cocoa
For the mousse:
- 250 g of cooking chocolate
- 4 egg yolks
- 70 g of sugar
- 320 ml of sweet cream
Preparation
Preparation of the biscuit:
- Separate whites from yolks.
- Beat egg whites until stiff, gradually adding sugar.
- Add finely chopped hazelnuts and cocoa, mix gently.
- Grease a round tray (diameter about 23 cm) and pour the mixture.
- Bake in a preheated oven at 180°C for about 15 minutes.
- Check with a toothpick if the biscuit is baked.
Preparation of the mousse:
- Chop the chocolate and melt it on steam.
- Beat egg yolks with sugar in another bowl.
- Heat 60 ml of sweet cream until it boils, then slowly add it to the beaten egg yolks, whisking constantly.
- Add melted chocolate and mix everything well.
- Allow the mass to cool down to body temperature.
- In the meantime whip the remaining 260 ml of sweet cream.
- Gradually add the cooled chocolate mass to the whipped cream, stirring gently until everything is well combined.
Finalization:
- Spread the prepared mousse filling over the cooled biscuit.
- Leave the cake in the refrigerator for at least 2-3 hours.
Serving
Serve cold, garnish with grated chocolate, whipped cream or fresh fruit if desired. This cake has a rich taste and juicy texture, ideal for all chocolate lovers.
