CHICKEN AND MUSHROOM RISOTTO
Creamy risotto with chicken and mushrooms is a tasty and nutritious meal that is quick to prepare. It is ideal for lunch or dinner, and the richness of flavors and textures make it a favorite dish in many households.
Ingredients (for 2 servings)
- 1 large cup of rice
- 1 chicken breast
- 250 g of button mushrooms, cut into strips
- 1 small onion, chopped
- Fresh parsley, finely chopped
- Salt, pepper (or spice of your choice)
- Chicken broth (or water)
- A little oil for frying
Preparation
- Preparation of rice:
Wash the brown rice, add some chicken broth and cook until half cooked.
- Preparation of chicken:
Remove the meat from the bones, cut it into small pieces or strips and fry it in a little oil until it turns golden brown.
- Stewing vegetables:
Cook the chopped onion in the same oil until it softens. Add the mushrooms and fry until they soften and release their liquid.
- Combining ingredients:
Put the chicken back to the pan with the vegetables, add the previously cooked rice and mix well.
- Seasoning:
Season to taste with salt, pepper and dry spices. Add finely chopped fresh parsley and mix well.
- Completion:
Gradually add the chicken stock, a little at a time, until the rice is fully cooked and creamy. Make sure that whole grain rice needs at least half an hour to cook.
Serving
Serve warm, sprinkled with fresh parsley if desired. This risotto is the perfect meal for colder days, providing a richness of flavor and satisfaction with every bite.
